"Not believe in Santa Claus! You might as well not believe in fairies. ... Nobody can conceive or imagine all the wonders there are unseen and unseeable in the world."

Yes, Virginia ... there is a Santa Claus!

Strawberry Santas

You may not think of strawberries as a traditional Christmas food, but oh my goodness have you seen these adorable Santas and Santa's hats?  If you live somewhere that you can find lovely fresh strawberries at that time of year, you simply MUST have a go at a variation of these adorable edibles.

For a simple nod to the idea you could decorate the tops of brownies, cupcakes and the like with strawberry Santa's hats.  You could dip the sliced-off-to-flatten bottom of a strawberry into white chocolate and coconut to make stand alone stantas hats.  Or, you could have a go at the wee man himself with Strawberry Santas.

I've seen a variety of renditions using different fillings and different embellisments, but the most popular filing seems to be a mixture of cream cheese and icing sugar which would be a lovely accompaniment to  the strawberry and would hold up well.  By all accounts they don't last long on the plate so holding up may not be too much of an issue.

There is a good recipe with instructions at the Channel 4 website, or you can just take the concept and run with it.   You can also see many more variations for ideas on my Christmas Treats Pinterest board.  Some versions are quite the work of art!

One thing I would suggest, if you are going to use chocolate chips for the eyes - as some do - make sure you get the teeny tiny ones as Santa looks like the day after the night before with the larger normal size chips.  It's just a bit odd.

A tip that I really like is to put your Santas on to a plate dusted with icing sugar.  This really completes the picture of a north pole scene.

For a Grinch version of the concept, you can use grapes and banana slices along with your strawberry hat and fashion with a mini-marshmellow on top.  Now there's a nice healthy, light and refreshing snack for the time of year when everything seems to be so rich.
